The pan is made of carbon steel (aka polished steel, or acero pulido), which is ideal for paella since it conducts heat quickly and evenly. The pan is thin but quite rigid and durable, with a hammered dimpled bottom. The handles are made of steel and painted red. Carbon steel is the traditional material for paella, and some paella devotees feel that it enhances flavor. As with any raw steel pan, it requires some care: you must dry the pan right after washing it and then rub the inside with a little vegetable oil to prevent rusting. If the pan does rust, a few passes with steel wool takes it right off.

Perfect size for larger meals
The description claims this pan can make up to ten servings of paella. In fact, it will make 12-14 servings. If you are new to using a steel paella pan there are a few things that you need to know that will save you disappointment.
First: these pans are relatively thin. All traditional paella pans are. This is because the paella is supposed to be cooked over medium low heat. If you go higher you risk ruining the pan and the paella.
Second: to those of us who can make a great risotto do not think making paella is the same. It's not. Risotto uses a different type of rice (arborio) that has an absorption rate of two cups of liquid for every cup of grain. Moreover, that type of rice is labor intensive because it requires a continuous cycle of pouring in stock, stirring until the grains absorb it, and pouring in some more stock. Great pan
Actually purchased this to use as a lid for a 20" cast iron pan I purchased. It's such a nice pan that I think I will find a different lid and use this the way it is designed for.
