How does the chamber machine work? When sealing with a chamber machine, the vacuum pouch is placed inside the chamber and the lid is closed. Air is sucked out of the entire chamber, not just the pouch itself, allowing air pressure on both the inside and outside of the pouch to remain equal and liquids to stay inside the pouch. After the air has been removed, the pouch is fully sealed and air is returned back into the chamber.

Ary Vacmaster VP 215
I purchased this machine after much research on the internet, I am very pleased with the product. It is well made and easy to operate. The instructions are to the point and easy to understand. You also receive extra heat tape for the sealing bar, oil for the pump and about 75 pouches in three different sizes. The bags (pouches) are thicker than the external type bags and a lot less expensive. The sealing bar makes a double seal and there is no problem with moisture being sucked up into the vacuum apparatus as the process in done inside the chamber. The machine weighs about 85 pounds so it needs a dedicated place as it would not be easy to move.
The VP215 has to be shipped by freight (common carrier) because of its weight (with packing about 120 pounds). I recieved the machine in perfect condition, it was strapped to a pallet, wrapped with saran wrap,double boxed and also set in a foam inner casing so nothing could be damaged.

A Great Vacuum Sealer
So, I'm on a sousvide kick and the cheapo sealer that came bundled with my water oven was broken upon arrival (it was the SousVide Supreme Special Promo Package). My mom has a similar sealer so I know how those work, but I wanted something that would allow me to vacuum liquids too. After much web research, I decided upon the VP215. The VP210 was in the running too, but I decided that a better pump was worth an extra 100 bucks and hopefully longer life.
The machine is delivered from a third party - not Amazon - but shipping was free. Which is great because it was coming cross-country and it weighs over 150 lbs! I was not familiar with the freight forwarder they used (Old Dominion) but the folks there were nice enough, even though they refused to deliver the machine to my house the same day they received it. I have a good sized SUV and not wanting to wait over the weekend to play with my new toy, I drove over to their distribution point myself to pick it up. Carrying...

Damn this baby SUCKS. I mean that in a good way. After a couple of tries you will get the setting down. Read the instructions on how to use it, they are fairly close to the times you'll need for proper sealing. I had a food "sLaver" before this machine and there is no comparison. With the VacMaster you don't have to worry about liquids being sucked into the machine. The bags are less expensive and the ease of use is fantastic, it is well worth the price and should last a long time. Be forewarned, this baby is HEAVY so you'll have to find someplace to keep it as you won't be moving it around very easily. A HEAVY duty microwave cart works great. You can vacuum seal liquids in the pouches as well (soups, stews and sauces). So far haven't had any bags come unsealed like with the food sLaver.
